With the meat facing downward, wrap the foil up and over the ribs and seal the pouch closed tightly. ¼ cup pork rub, 1 tablespoon apple cider vinegar. Place the pouch of ribs on the top rack in your grill, or away from the briquettes if using. Reduce the heat to low if using a gas grill and cook for 50 minutes.
Aids in tenderizing. Just mix the rub ingredients together in a small bowl, and it’s ready to go. Apply the rub liberally to both sides of the ribs. Allow the ribs to rest with the rub for 2 hours to 24 hours. Refrigerate if needed, and cover them with plastic wrap if you do. Most rubs contain a good amount of salt.
Use about 4 quarts of water. Add equal parts of brown sugar and salt, about one half cup of each. Add the water and other ingredients to a pot and bring to a boil. Simmer for about five minutes, then remove from the heat to cool. Add a couple cups of ice to bring the temperature of the brine down to about 45o F.
5. Tear off four long sheets of heavy-duty aluminum foil. Top with a rack of ribs and pull up the sides to keep the liquid enclosed. Sprinkle half the brown sugar on the rack, then top with half the honey and half the remaining apple juice.
Preheat oven to 325°F. Line a baking sheet with aluminum foil. Place the rack, bone side down on the foil lined baking sheet and let the ribs bake for 30 minutes. Take ribs off baking sheet and place on a new sheet of aluminum foil (maybe use 2 sheets of aluminum foil to accommodate ribs).
Position the slab of ribs onto the grill grates and close the lid. After 30 minutes, turn the slab of ribs over to grill the other side for 30 to 45 minutes. By this time, the ribs should be a beautiful brown color and no longer pink. Remove the ribs from the grill and place onto a clean roasting pan or baking sheet.
Turn one burner on medium-high heat and place your foil packet with wood chips onto the grill grate and close the lid. It is going to take about 15-20 minutes for the foil packet to start smoking so in the meantime you can get your ribs ready. 1. Trim your ribs and remove the membrane.
